A delicious southern recipe. This cake is full of banana, pineapple, coconut, and pecans. It makes a beautiful bundt, but can also be used to bake a cake for stacking and decorating.

Instructions
Cake
  1. Preheat oven to 325 degrees
  2. Toast coconut and pecans in the oven until nicely browned (Stir often!!!)
  3. Whisk together flour, sugar, baking soda, and spices
  4. In mixer, beat butter until fluffy
  5. Beat in eggs and vanilla
  6. Add in pineapple and banana
  7. Stir coconut and pecans into butter mixture (reserve some for garnish)
  8. Gradually add in dry ingredient mixture
  9. Pour batter into greased and floured pan
  10. Bake for 65 minutes or until toothpick inserted in the middle comes out clean
  11. Allow cake to rest in pan for 15 minutes before turning out onto cooling rack
  12. Cool cake completely before icing/glazing
Icing/Glaze
  1. Beat cream cheese and butter until smooth
  2. Add in vanilla and cinnamon
  3. Gradually add powdered sugar and milk until desired consistency is reached
  4. Pour on cooled cake
